Chanterelles with oven roasted potatoes
To tell the truth, this dish last year ate even my hubby! And agreed that it not only looks great, but taste the same way too. To bake potatoes in the oven takes time, so sometimes I change them with boiled potatoes. However, if you are not in hurry, you should really try to bake them in the oven. It is more tasty that way.

Spring is here – calendar tells it, but outside is still cold. Anyway, my eyes automatically turns to warm colours. Carrots are full of warm orange colour and they are perfect for us today. In this bake, I used oat bran and it gave the bake a little bit grey colour. So if you want to make colour of the bake brighter – use semolina.

Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉

Usually I make granola in summer, when it’s hot outside and no one wants to eat porridge. But when last week I tried new recipe for granola bars and I had only crumbs, my kids ate it just like usual granola for breakfast. And then they asked to make more granola. So I make my favourite at this moment granola. Kids’ favourite granola will have to wait a little bit. They enjoy this granola too, just for them I had to add chocolate with more sugar.

Dessert came out really good. Someone put fruit salsa on cinnamon chips, someone ate fruit salsa with teaspoon next to the cinnamon chips. Kids ate all leftovers and looked for more cinnamon chips, but unfortunately… they were all gone.

This dinner was very delicious and quick and it reminded me the spring when almost every meal was with a huge bowl of salads and a little bit meat for satiety. I baked chicken on electric grill and it was done in 10 minutes. It gave just enough time to chop my salads. This morning was cloudy so it was a good time to cook this oatmeal. My kids don”t like simple oatmeal (or I just think that I still didn”t learn to cook it tasty), so I decided to make a little bit sweet but still healty version. Banana gives mild sweetness and nuts adds some crunchy texture. In the original recipe walnuts are used, but we don”t like them so I changed them to hazelnuts. At the end my little one asked next time not to add nuts at all. So decide by yourself to use or not to use nuts in your oatmeal.

One more healthy recipe that I found in books about healthy living. It’s without diary products – that was one good point for me. Another thing – it’s with flaxseed. I’m trying to use them more in our daily family diet. So I almost ran to the kitchen and mixed it. I really recommend to let soak flaxseed meal in water for a few minutes, or your shake will be with hard small parts. But if you will be patient – shake will be very thick and creamy.

One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.

Almost every weekend we try to do something tasty. It doesn’t have to be sweet. So this time I suggest you lavash chips with blue cheese sauce. You will make them in half an hour for sure. And they are really healthier option for patoto chips.
Some my notices. When you sprinkle lavash with salt – be careful, because cheese sauce is quite salty. If you are afraid that onion greens will fall of the chips – don’t be, they really don’t fall that easy. Also, I noticed that super markets sell lavash from a few companies, they are a little bit different in thickness. So I recommend to use thinnest – chips will be more brittle.

Lately people started to switch potatoes with cauliflowers. I saw how people make “potato” mash from cauliflower, and then I saw “potato” salads with cauliflower. We like cauliflower, so why not to give it a try. I made them for lunch and you know – it was really nice to get message from my hubby “Thank you, it was really delicious”. So I opened my lunch box and tasted them – I really enjoyed them. The main thing – don’t over boil cauliflower, it should be a little bit crispy. And if you don’t like mayonnaise, you can use sour cream or natural yoghurt – I tried with them when I was out of mayo. Just you will need to add more seasonings, and maybe add a few drops of lemon juice or vinegar.

I’ve heard a lot of compliments on these sticks. And they were tasted not only by my family, but by a lot of people in my mother’s relatives gathering. From this amount you will bake a lot of cheese sticks, so when I saw it I devided it in halves and the first half was baked the same day for the gathering. The second part was baked next day only for my family. So what can I say… You should really wait and let rest dough in a refrigerator, because next day they were lighter and moister. By the way, I made half with caraway and in another half I omitted it. I liked both variants, so you decide by yourself to use caraway or not.

So we chose this banana-bread pudding. The next weekend I bought all needed products and measured everything. Then I invited kids to the kitchen to do everything what was needed to prepare pudding. And we really had a very good time 🙂 There were some troubles for kids, but I just reacted calmly and the mood of everyone was saved 🙂 Even dad said that this dessert is very good. We agreed that if we had some ice cream it would be even better, but even by itself it was very good 🙂
