Pork medallions in Maggi Papyrus with healthy salads
Next to the pork medallions I served some healthy salads which I saw yesterday in one of my magazines. It was simple and almost everything was already in my refrigerator. We enjoyed them a lot, even my kids ate them (with some motivation – some candies in front of them, which were kids if they eat all salads). Me and my hubby agreed that these salads would be grate even without meat, because roasted sunflower seeds were so good in these salads. So we’ll be making them soon for sure again.

This pie may look strange at first, but we tried it twice and we liked it. Apples gives sweet and Tabasco – spicy tastes. And this pie doesn’t require eggs, so the filling is not so solid but it’s not crumbly also. I and my son liked the pie crust – it’s with whole wheat flour, so it crumbles a little bit more than usual with only white wheat flour, but it has some charm in it.

Maybe for someone there’s nothing new, but me and my hubby didn’t eat this dish in our childhood, so it’s new for us. Now when we need quick dinner or supper, we braise all frozen vegetables the same way, and always it comes out really very very delicious.

I made the decision that my family like flax seeds. I baked these crackers don’t know how many times, but every time they end in the same way – we can’t stop eating them and they finish at the same day. Even today my little man can’t stop eating them. But they are not sweet so I let him enjoy them.

You can mix everything in a bowl, but I think it’s beautiful and more quick to serve them layered in plates. The next day I prepared them without tuna, and they got a lot of compliments from my kids.

Sometimes even when at home there is only a few products, you still can prepare satisfying meal. For this one you only need to buy canned tomatoes and chicken breast, other products – I guest almost everyone have at home. But I have to tell you this time you will have to spend some time preparing tomato sauce, but it’s worth that. I like it even more than store bought. But my kids don’t agree with me 🙂 But everyone has the right to choose.

One more healthy recipe that I found in books about healthy living. It’s without diary products – that was one good point for me. Another thing – it’s with flaxseed. I’m trying to use them more in our daily family diet. So I almost ran to the kitchen and mixed it. I really recommend to let soak flaxseed meal in water for a few minutes, or your shake will be with hard small parts. But if you will be patient – shake will be very thick and creamy.

This is my favourite pillaf recipe. After I found it I don’t seek any new anymore. I like it because it doesn’t use tomato sauce or ketchup, because real tomatoes are used. But if you like ketchup, you can use it anyway. Sometimes I adapt recipe for my hubby and add only small carrot, sometimes I don’t add bell pepper at all. But sometimes I do everything by recipe, because I think proportions given are just perfect.

But almost always the best dish for me and my daughter is fried green beans with butter and bread crumbs. Until now! This stew doesn’t require much of your time, it just needs time to braise. I think freshly baked buns would be perfect here, but I had no time for them, so we ate with white bread. Original recipe calls for a lot more caraway, but I adjusted the amount for my family taste. Also be careful with the salt if using stock or you can end up with too salty stew (as I do sometimes 🙂 ).

One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.

Almost every weekend we try to do something tasty. It doesn’t have to be sweet. So this time I suggest you lavash chips with blue cheese sauce. You will make them in half an hour for sure. And they are really healthier option for patoto chips.
Some my notices. When you sprinkle lavash with salt – be careful, because cheese sauce is quite salty. If you are afraid that onion greens will fall of the chips – don’t be, they really don’t fall that easy. Also, I noticed that super markets sell lavash from a few companies, they are a little bit different in thickness. So I recommend to use thinnest – chips will be more brittle.

Lately people started to switch potatoes with cauliflowers. I saw how people make “potato” mash from cauliflower, and then I saw “potato” salads with cauliflower. We like cauliflower, so why not to give it a try. I made them for lunch and you know – it was really nice to get message from my hubby “Thank you, it was really delicious”. So I opened my lunch box and tasted them – I really enjoyed them. The main thing – don’t over boil cauliflower, it should be a little bit crispy. And if you don’t like mayonnaise, you can use sour cream or natural yoghurt – I tried with them when I was out of mayo. Just you will need to add more seasonings, and maybe add a few drops of lemon juice or vinegar.

This chicken has a mild lemon taste. It is a little bit spicy and hot, but it’s not so hot because my kids skill eat it 🙂 The seasoning mixture in here is just perfect for us.

I’ve heard a lot of compliments on these sticks. And they were tasted not only by my family, but by a lot of people in my mother’s relatives gathering. From this amount you will bake a lot of cheese sticks, so when I saw it I devided it in halves and the first half was baked the same day for the gathering. The second part was baked next day only for my family. So what can I say… You should really wait and let rest dough in a refrigerator, because next day they were lighter and moister. By the way, I made half with caraway and in another half I omitted it. I liked both variants, so you decide by yourself to use caraway or not.

And found it 😉 It is simple, quick and all ingredients were at my hand. I’d like to make it today again, but… there’s no coffee at home. When I was a child, my mom used to bake very similar cake to this one, she never added any fats to it. But this cake is more beautiful to me because it has apple layer. When me and my hubby for dinner want only salads, I know that my kids won’t aprove it. So I bake for them these pizza muffins and we eat them with the salads 🙂 They are very easy and quick, I think even a kid can bake them. The only thing I can say – I don’t know how they taste when completely cooled down or on the next day – we eat them warm and all at once.

This year we had a lot of raspberries. We ate them raw, made some new recipes, and still had some for freezing. I’m so happy about that, because now autumn started… and we started to go to school and kindergarden. The good thing that I am on vocations so I have quiet time to drink tea and to think what can I do good for my family.
