Spring is here – calendar tells it, but outside is still cold. Anyway, my eyes automatically turns to warm colours. Carrots are full of warm orange colour and they are perfect for us today. In this bake, I used oat bran and it gave the bake a little bit grey colour. So if you want to make colour of the bake brighter – use semolina.
And just a note about carrots. If possible, use young carrots because they have milder taste. Once when I used young carrots the bake came out just perfect. Another time I was not so lucky and I felt carrot taste in the bake that I did not like. However, no one else noticed it, just me 🙂
Carrot and cottage cheese bake
Time needed:
Yields: 4 servings
Calories: 266 kcal / serving
Ingredients:
- 400 g cottage cheese, low fat and creamy (I use creamy kind and crumbly, depends what I have on hand)
- 150 g carrots
- 4 eggs
- 3 tbsps. sugar
- 6 tbsps. oat bran or semolina
- 1 tsp. baking powder
- dried bread crumbs and butter, to coat the baking form
Directions:
- Preheat oven to 180°C temperate.
- Peel carrots and grate with finest grater.
- Mix all ingredients in a bowl.
- Coat baking dish with butter and sprinkle with dried bread crumbs.
- Pour batter in to the baking dish.
- Bake about 30-45 minutes, it will depend on baking dish size.
