I make this bake with my first zucchini that grew in our garden. In my archive I didn’t find the recipe that I could follow, so I fantasized a little bit and make bake with cottage cheese and zucchini. My family enjoyed it a lot. And even when I baked it again, all disappeared in one sitting. So please, bake and enjoy it too!
Cottage cheese and zucchini bake
Time needed:
Yields: 4 servings
Calories: 394 kcal / serving
Ingredients:
1 cup = 237 ml
- 4 eggs
- 2 tbsps. sugar
- 400 g cottage cheese
- 300 g zucchini
- 80 g rice flour
- 1 tsp. baking powder
- 130 g raisins
- pinch salt
Directions:
- Preheat oven to 180°C.
- Rinse raisins with water and let bloat a little bit.
- In a bowl mix eggs with sugar, cottage cheese, flour, baking powder and salt.
- Add grated zucchini.
- Mix in drained raisins.
- Line baking form with baking paper.
- Pour batter in a baking form.
- Bake in a preheated oven about 40-50 minutes.
- Serve with sour cream and/or jam.
- Enjoy!
