I made this dessert last year several times. But I was late to add recipe here, so it waited quietly for today.
I found the soft sourness of rhubarb very very delicious with cream cheese cream. Others also liked it a lot. This year rhubarbs in my garden has grown and this weekend I am going to repeat again this dessert.
Cream cheese dessert with rhubarbs
Time needed:
Yields: 6 servings
Calories: 321 kcal / serving
Ingredients:
1 cup = 237 ml
- 300 g rhubarb
- 300 g cream cheese
- 100 g natural yoghurt
- 1/2 cup sugar(decide by your taste, if it’s enough)
- 1 tsp. vanilla sugar
- 100 g sponge biscuits, for example Savoiardi (I used less)
Directions:
- Wash rhubarbs stalks, clean and cut into small cubes.
- Add rhubarbs in a pan. Pour vanilla sugar and half of sugar. Braise on a low heat till rhubarbs will be soft.
- Let cool a little bit rhubarb mixture. Then divide between glasses.
- On top add broken biscuits.
- In a bowl mix cream cheese with yoghurt and residual sugar.
- Divide cream cheese mixture between glasses.
- I recommend to put dessert in a refrigerator for some time, to let soak biscuits in rhubarb syrup. But it’s really optional.

Cream cheese cookies
Soft cookies that melts in you mouth. At my work they had real success, and the ones that left at home disappeared very quickly.
Chocolate biscuit and sour cream cake
This cake was the perfect choice, because it was VERY DELICIOUS! It was prepared very quickly and my son was able to make everything by his own. It has only one minus – need to wait till the next day to enjoy.
Cheesecake
This year we met at home only with kids. So the preparation for the evening wasn’t much. This cake in all recipe sources got a lot of compliments. I agree with them – it’s really good and simple. I used 26cm cake form. And I really suggest you to warm the mascarpone and condensed milk mixture, because if you won’t do it you’ll get lumps when you pour gelatine (Then I had to put the mixture in a warm bath and wait till mixture warms and lumps dissolve).
Chicken with Baked Rhubarb
I do as always – I add recipe here only when rhubarb season is over. Even if I prepared this in the beginning of the season. But this dish is suitable for those who like sweet and sour food and for those who like meat with fruits. In the baked chicken we tasted rhubarb only a little bit, and the whole chicken taste was great. Also, I blended baked rhubarbs and served as the sauce – it was really delicious for me and my daughter.
Cake with the caramelized bananas
This year my little boy turned 4! And this is his cake. I spend a lot of time looking for the right cake. The choice was good! Maybe a little bit cream was fat, but it was tasty. Also I drizzled sponge with cherry compote. For 6 people the cake was too big, so leftovers I freezed and now I can enjoy it with the afternoon coffee 🙂
