Spring is near so we should start cleaning our freezers. We love green beans and every year I prepare a lot of them for the winter. But almost always the best dish for me and my daughter is fried green beans with butter and bread crumbs. Until now! Maybe this delicious salads are very tasty just for me and my hubby, because dressing has a really strong taste. But kids also eat these salads, just amount is not very big 🙂
Balsamic green bean salads
Time needed:
Yields: 4 servings
Calories: 149 kcal / 1 serving
Ingredients:
- 450 g green beans
- 1/2 red onion
- 250 g cherry tomatoes
- 50 g feta, crumbled
- Dressing:
- 2 tbsps. olive oil
- 1,5 tbsps. lemon juice
- 1,5 tbsps. balsamic vinegar
- 1-2 cloves garlic, crushed
- salt
- black peppers
Directions:
- In a small bowl mix all dressing ingredients.
- Trim ends of green beans and rinse. Boil for about 3-4 minutes until crisp-tender. In a colander, rinse well with cold water to stop cooking, then pat dry. Cut green beans into 3-4 cm pieces
- Dice red onion. Cut in half cherry tomatoes.
- In a bowl mix green beans, onion and dressing. Put bowl in a refrigerator for 1 hour or more to marinate.
- When ready to serve add tomatoes and feta. Mix carefully and serve. Enjoy!
