The first time I made them for Christmas presents, but they are really good, so sometimes I prepare them just for us. They good for a snack or next to the cold beer. The last time I made them I put just a little bit less cayenne pepper, and my kids enjoyed them too.

Spicy almonds

Time needed:
Yields: 6 servings
Calories: 250 kcal / serving

Ingredients:
1 cup = 237 ml

  • 1 egg white
  • 2 tbsps. sugar
  • 1 tsp. salt
  • ½ tsp. chilli powder
  • ¼ tsp. ground pepper
  • ½ tsp. ground cumin
  • 1½-1¾ tsp. cayenne pepper
  • 2½ cup (300 g) almonds (or other nuts)

Directions:

  • Beat egg white till the strong peaks.
  • In another bowl mix all seasonings and carefully mix in egg white.
  • Then pour nuts and mix, coat all nuts with seasonings.
  • Pour in one layer into a baking tray, lined with baking paper. Bake in a preheated to 150°C oven for 15 minutes.
  • Then take out, mix, seperate nuts from each other. Lower heat to 120°C and bake for 10 minutes more.
  • Then take nuts out, mix, seperate and let cool completely.
  • Enjoy with cold lithuanian beer!

I’m happy and proud. This cake is not just tasty but very cute 🙂 It was made for my daughter’s 5th birthday. But presenting it only now because somewhere at this time my blog is celebrating 3 year old birthday and at the same time I celebrated my birthday anniversary. But this year birthday was different – I didn’t do anything, just celebrated 🙂

Beetroot, cashew and feta salads

Don’t know why but this autumn I’m hooked on beetroots. Every weekend I boil some beetroots and through the week I incorporate them in our dishes. And then story repeats. When I wanted for dinner something light, I prepared these salads. By the way, this recipe in the book is called carpaccio, but I think it’s more salads, and the name is more usual and not so fancy 🙂 . Family girls enjoy them, the big boy ate them and just said that more balsamic vinegar would be better, and the little boy as always, prepared some theater and then ate them, just without enjoyment. So I remember these salads as they are fit for girls 🙂 And I prepared very similar salads with hazelnuts, and they were very good too. So as always – don’t be afraid to experiment and correct ingredients by your refrigerator or cupboard products.

Muffins with rhubarbs and walnuts

At last this hear I grew some rhubarbs. And baked this muffins in June, but they appear on my blog only now. Sorry 🙂 These muffins are soft and I recommendto bake them in paper forms. I sprinkled some with cinnamon mixture, some didn’t. My hubby decided that with cinnamon is better. And I, cinnamon lover, can’t disagree with him 🙂
