It was really impulsive baking. I saw them in a magazine for parents in a section “Baking together”. 🙂 Together? So I asked if my kids want to bake something and they happily agreed. So I just measured all ingredients in purpose that my kids were not bored, and they started to work. The result came out perfect – smell was fantastic, and the taste was remarkable – berries gave some refreshing sourness and banana gave moisture. Even next day they were very good and left over disappeared too quickly. So I’m thinking to repeat them very soon again.
Muffins with berries
Time needed:
Yields: 12 servings
Calories: 144 kcal / serving
Ingredients:
1 cup = 237 ml
- 200 g flour
- 1 tsp. baking powder
- 1/2 cup sugar
- 50 g butter, melted
- 2 tbsps. black currants (in original blueberries were used)
- 2 tbsps. milk
- 2 tbsps. orange juice
- 1 orange peel, only yellow layer
- 1 egg
- 1 banana
- 1 tsp. vanilla sugar
Directions:
- In a bowl mix flour, baking powder and sugar.
- In another bowl beat an egg with a milk, orange juice and melted butter.
- Mash berries and banana and mix them to the liquid mixture.
- Add orange peel and gradually mix in dry mixture.
- Divide dough to muffin baking forms and bake in a preheated to 200°C oven about 15-20 minutes.
- Enjoy with a tasty tea or alone 🙂
