Spanish omelet

Author: Aušra

Date:

This is our new best breakfast. We baked it I think even four times. And understood one thing – it’s really good with tomato and sour cream sauce. Maybe it would be great with green salads too, but this combination we will try only in the spring.

Spanish omelet

Time needed:
Yields: 4 servings
Calories: 316 kcal / serving

Ingredients:

  • 2 tbsps. oil
  • 2 big potatoes, cut in cubes
  • 2 big onions, cut in cube
  • 6 eggs
  • salt and black peppers
  • 1 tbsp. green onion, chopped

Directions:

  • In a pan heat oil and put potatoes and onions. Bake mixing for 10 minutes.
  • In a bowl beat eggs. Season with salt and peppers.
  • Pour egg mixture over potatoes and slightly mix. Cover with a lid and bake for about 10 minutes, while the eggs will be stiff. Then put pan in the oven and grill (turn upper heating element) for 1-3 minutes.
  • Put omelet in a big plate, cut and sprinkle with chopped green onions. I really recommend to try with sour cream and tomato sauce.

Omelette with cheese

I know, I know this is not some super stunning recipes, but this omelette is baked in our house almost every week, or when no bread we have at home, or when sandwiches starts to get boring. My kids don’t like simple omelette or baked eggs, but this is with cheese. And it buys my kids 🙂 Usually I prepare it without recipe, but I don’t like recipes without measurements so I give you exact recipe.

Agurkų ir kiaušinių salotos

Cucumber and eggs salads

This simple salads are from kids recipe book (only one of a huge amount). But they really suitable for parents, just double or triple the quantities. If your little one is like mine and doesn’t like salad leaves, cut them in small chunks – it worked for my kid and he ate and didn’t noticed them.

Potato and curds Arrows

Potato and cottage cheese Arrows

After lunch I had boiled potato leftover, so I let my fantasy take me away 🙂 These arrows are really greate and cheese is here a must. But you should be careful with the salt, because cheese already has it inside.

Bulvių ir porų sriuba

Potato and leek soup

It is getting cold. And when it”s cold, we need something warm. So I thought about thick soup. This recipe I chose because I had leek that was sadly looking at me from the fridge, and other ingredients I had on hand. And preperation like almost in all my recipes – easy and quick. But when I tasted this soup I understood that there is something really special – I liked the thyme very very much. Even my hubby agreed with me. So this soup was added to our favourite soup recipes.

Sluoksniuotos sūrio ir burokėlių salotos

Layered cheese and beetroot salads

Very delicious salads. Sad that photo doesn’t present the real taste.
