This is one of the old recipes, but it was waiting to show here because of tiredness or laziness. Don’t know which would be correct word 🙂 But we liked it so it’s time for soup to show up here. Its sourness was fabulous so for sure we will repeat it when fresh pumpkin will be at my home again.
Lemon pumpkin soup
Time needed:
Yields: 4 servings
Calories: 226 kcal / serving
Ingredients:
- 50 g butter
- 1 big onion
- 500 g pumpkin
- 250 g potatoes
- 1 clove garlic
- 1/2 tsp. dried thyme
- 1,2 l chicken stock
- 1/2-1 lemon juice
- 150 ml cream, 10% fat
- salt
- peppers
Directions:
- Melt the butter in the pot, then put chopped onion and fry on low heat while it will be soft.
- Put cut in cubes pumpkins, potatoes, chopped garlic and thyme.
- Braise for about 20 minutes while vegetables will be soft.
- Boil for about 10 minutes then blend with blender.
- Pour lemon juice and cream and heat a little bit but don’t boil.
- Enjoy!
