We just love cottage cheese. But in the long time we were tired of the same cottage cheese bake. So when I found this recipe I knew I have to bake it – I have pudding mix packet bought long time ago. It is really a good way to use it. My kids loved it. And I prepared half of the recipe, but soon I had to repeat it 🙂

Cream waffles

Time needed:
Yields: 6 servings
Calories: 298 kcal / serving

Ingredients:

  • 700 g cottage cheese
  • 4 eggs
  • 100 g icing sugar
  • 1 packet vanilla pudding
  • 200-250 ml milk
  • 1 tsp. vanilla sugar

Directions:

  • Put cottage cheese, sugar powder, eggs and vanilla sugar in the blender and mix till the solid texture.
  • In another bowl mix milk with pudding powders and pour in to the cottage cheese mixture. Mix again.
  • Pour mixture to the baking dish coated with butter and bake in preheated to 180°C oven 1-1,5 hours.
  • Eat warm with sour creand and/or jam. Enjoy!

Cookies with cottage cheese

Once great grandparents brought from the farmer market home made cottage cheese for there beloved grandchildren. But the cheese wasn’t so delicious as everyone wanted so for a long time it sat quietly in the corner of a fridge and waited. But the day has come when this cheese was used for unsweetened cookies, that tasted something between cookies and baked cottage pancakes. Everyone was happy – children, because they got tasty snack, cottage cheese – because at last he was useful, and parents – that didn’t throw away spend money.

For me cottage cheese and apples looked like a strange duet, but something kept pushing me to try this recipe. And the cake is juicy and refreshing but also not very sweet. It’s really good. 🙂

Cottage cheese and rye flour balls, or cookies?

The author of this recipe says it’s cookies and in her blog they really look like cookies. In my case, they are balls and the texture is between cookies and buns. Therefore, we call them just balls. The first day they have crispy exterior and the next they are all soft. In my family, they are enjoyed in all forms. Just I have to hide some if I want to enjoy them next day. By the way, you can see from the ingredient list that all sweetness comes from just one tablespoon of honey, so in our opinion they are not cookies at all 🙂 But if you will enjoy them with a sweet drink, they will be perfect companions.

Rice bake with curd

Lately my family doesn”t want any bakes. But this recipe was the only one that I liked and wanted to prepare for the Rice week. I said that I”m gonna make it you like it or not 🙂 And only when I saw how my family was eating this bake I remembered that rice and curd are the most favourite ingredients so this bake had to be a hit from the beginning. And one more point for this bake – it”s just slightly sweet. That”s why I heard compliment from my hubby. He said that this bake is probably the best that he ever ate 🙂 So you look at the last piece of bake 🙂 and it disappeared very quickly after I did some shots.
