Banana makes these muffins smell very nice and zuchhini gives moisture. The good thing that you can use freezed grated zucchini (just squeeze the juice very good).
Banana zucchini muffins
Time needed:
Yields: 12 muffins
Calories: 210 kcal / muffin
Ingredients:
1 cup = 237 ml
- 1/3 cup oil
- 1/2 cup sugar (I used 100 ml)
- 2 eggs
- 1 3/4 cup all-purpose flour
- 1 1/2 tsp. baking powder
- pinch salt
- 2 ripe bananas, mashed
- 1 cup zucchini, grated
- 1/2 cup walnuts, chopped (optional)
Directions:
- Preheat oven to 180°C.
- Cream together oil and sugar.
- Add eggs and banana, beat well.
- Sift together dry ingredients, add to creamed mixture.
- Add zucchini and stir well. Stir in nuts.
- Pour batter into muffin pan.
- Bake for 30-35 minutes.
- Let cool on wire rack.
- Enjoy!
