Chicken and rice stew with chanterelles

At first glance it seems that it is simple pilaf with chicken. But lemon and hot chilli sauce gives spicy taste to the dish. I prepared it already two times: first – without mushrooms, because my hubby was at home, the second – with mushrooms, because I was all alone 🙂 Both times it was delicious. Don’t know about other kids, by mine don’t like spicy dishes, so I didn’t even asked to taste 🙂
Chicken and rice stew with chanterelles
Time needed:
Yields: 4 servings
Calories: 419 kcal / serving
Ingredients:
- 150 g rice
- 1 onion
- 2 cloves garlic
- 2 chicken fillets
- 2 tomatoes
- 1 lemon zest and juice
- 2 tbsps. oil
- 100-150 g chanterelles, ceps or champignons
- 100 ml sweet and sour hot chilli sauce
- 1 tbsp. honey
- 1 tsp. salt
- 2 tbsps. parsleys, chopped
- 2 tbsps. mint, chopped
Directions:
- Boil rice.
- Meanwhile chop onion and galic.
- Cut chicken to the chunks, tomatoes – into cubes.
- Grind lemon zest and squeeze juice.
- In a pan heat the oil and fry onion and garlic for about 1-2 minutes.
- Add chicken and fry slightly.
- The put lemon zest and pour lemon juice, heat 3-4 minutes more.
- The put tomato cubes, cut mushrooms, pour hot chilli sauce and honey, season with salt and mix.
- At the end mix in boiled rice and heat a little bit.
- Sprinkle with the parsleys and mint.
- Serve immediately and enjoy!
