Cottage cheese cake with apples

For me cottage cheese and apples looked like a strange duet, but something kept pushing me to try this recipe. And the cake is juicy and refreshing but also not very sweet. It’s really good. 🙂

Cottage cheese cake with apples

Time needed:
Yields: 8 servings
Calories: 384 kcal / serving

Ingredients:

  • Crust:
  • 240 g wheat flour
  • 1 tsp. baking powder
  • 150 g butter
  • 1 egg
  • 2 tbsps. brown sugar
  • 2-3 tbsps. sour cream
  • Filling:
  • 3-4 apples or 400 g rhubarbs
  • 200 g cottage cheese
  • 40 g sugar
  • 1 egg
  • 2 tbsps. sour cream
  • 2 tbsps. butter, melted

Directions:

  • Mix flour, baking powder and butter in a blender till crumbs.
  • Add an egg, sugar and sour cream. Mix till the solid dough. Put in a fridge for an hour or more.
  • In the meantime peel apples and cut them in slices or in small cubes. If using rhubarbs, clean them and chop.
  • Mix other filling ingredients in a bowl.
  • Divide dough into two parts. Put one part again in a fridge and the other roll and put in baking dish, 30×20 cm size.
  • Put on dough cottage cheese mixture and then apples.
  • Take the second dough part and grate it on top of the cake.
  • Bake in 180-190°C preheated oven.
  • Enjoy!

This pie may look strange at first, but we tried it twice and we liked it. Apples gives sweet and Tabasco – spicy tastes. And this pie doesn’t require eggs, so the filling is not so solid but it’s not crumbly also. I and my son liked the pie crust – it’s with whole wheat flour, so it crumbles a little bit more than usual with only white wheat flour, but it has some charm in it.

Sometimes my body doesn’t like combination flour+meat, but in those moments we can substitute meat with cottage cheese and make delicious hand pies. My all family enjoyed them and 12 was enough only for three people, but not four 🙂 So next time I’ll have to prepare double portion that everyone cold be happy. 🙂

I don’t know why but I look at baking with dried fruits suspiciously. But now I’m ashamed… I baked these muffins and ate half of them all by my self… Sour milk gave the taste of cottage cheese. Strange, but we like it 🙂
