Refreshing coffee-cake with light cherry sourness. At the beginning I was afraid that the recipe uses too much cherries, but when we tasted this coffee-cake we understood that the balance of sweetness and sourness is just perfect.

Coffee-cake with cherries

Time needed:
Yields: 8 servings
Calories: 465 kcal / serving

Ingredients:

  • 150 g butter or margarine
  • 150 ml water
  • 3 eggs
  • 400 ml sugar
  • 450 ml all-purpose flour (I used a little bit more)
  • 4 tsps. baking powder
  • 450 g pitted cherries, fresh or frozen (I used frozen and didn’t defrost them before baking)
  • 2 tbsps. potato starch
  • 2-3 drops almond essence (optional)

Directions:

  • Melt the butter.
  • Beat eggs with sugar.
  • Mix cherries with starch.
  • Alternately mix eggs mixture, baking powder and flour mixture, butter, water and almond essence.
  • Mix in cherries.
  • Pour dough to the baking form that is buttered and sprinkled with dried bread crumbs.
  • Bake in the oven at 175°C 40 minutes.
  • Then low down the heat to 150°C and bake 40 minutes more.
  • Let sit coffee-cake 20 minutes before taking out of the form.
  • Enjoy!

When I got some chanterelles, I decided to bake this year something new. And because I know how convenient to take non-sweet pies for lunch at work, I chose this recipe. Only in original recipe says to use more salt then I usually need, so I give here already corrected recipe.

Gingerbread cookies

This gingerbread cookies I baked two times and the second time I made them thinner – these were much more better 😉 It’s sad that ducks, elephants, mice and butterflies didn’t survived till photo session.. By the way, I don’t know why but butterflies were most popular 🙂 Maybe because they were very colourful… This is the last entry about Christmas baking. So what now? Will be waiting for the spring? 🙂

Crepes with ham and cheese

It’s easy and quick dinner. I’ve tried to make crepes with ham and cheese filling before, but I missed something. And when I tried this recipe I understood, that this is it I was looking for. And the secret ingredient to success is mayonnaise.

1 1/2 cups all-purpose flour 1 tsp. baking powder 50 g melted butter 1/2 cup milk 200 g pumpkin puree 2 large eggs 100 ml sugar 1 tsp. vanilla 1/2 tsp. salt

And when I found this muffins, I stopped searching. We all liked them. My kids ate them. And now I bake more and some put in a freezer for quick snack for my children before sleep.
