One more cake with zucchini. Really great and moist. I didn”t have chocolate chips, but I didn”t miss them in the cake. Maybe with these chips the cake would be more delicious, but also more sinful 🙂

Chocolate Zucchini Cake

Time needed:
Yields: 12 servings

Ingredients:
1 cup = 237 ml

  • 2 cups zucchini, grated
  • 1/2 cup butter, melted
  • 1/3 cup vegetable oil
  • 1 3/4 cups sugar
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 4 tbsps. cocoa powder
  • 2 1/2 cups flour
  • 1/2 cup chocolate chips
  • pinch salt
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 2 eggs

Directions:

  • Mix all wet ingredients thoroughly, then stir in zucchini.
  • Mix dry ingredients together and then stir into wet ingredients and mix well.
  • Spread batter in a 25x30cm pan.
  • Bake at 160-170°C temperature for 40-45 minutes.
  • Sprinkle with confectioners sugar if you wish once it”s cool.
  • Enjoy!

Very delicious cake. I never have a chance to photo it because every time it disappears very quickly. It”s so juicy, not dry at all. And my husband can eat almost half of the pie at once 🙂

Strawberry and rhubarb cake

It’s very bad when you don’t write the recipe in the blog after you eat the cake 🙂 Then you have to look for the recipe for a few days. I baked this cake when we were going to the village and strawberries were still in the season. It had to be all strawberry, but I had no time so I use rhubarbs as they were near me. Rhubarb and strawberry combination isn’t new – it fits perfectly. And the texture of the cake is more like sponge than a teacake. I liked it very much.

I baked this challah a lot of times, because I just love it. The last time I baked it I prepared the dough and to rise the first time I put it in a fridge for the night. The next morning I took it out, formed challah and let rise it the second time, then baked it. So that morning we had delicious breakfast with still warm challah.

Somehow I baked pancakes long time ago. So came the time when I started to miss them. And I guess my all family miss them too, because these polenta pancakes disappeared very quickly. If you don’t have polenta or lazy to grind corn groats, you can use corn flour. You just have to use more milk.
