Once I made these salads and it was something new. Maybe it tasted not so usual to us, but it was really good. And now, I made these salads for four times and they still disappear very quickly. So I save the recipe here and recommend to try them you too.
White beans and dried tomato salads
Time needed:
Yields: 4 servings
Calories: 314 kcal / serving
Ingredients:
- 2 tbsps. oil
- 1 clove garlic
- 425 g white beans, boiled
- 1 red onion
- 125 g sun dried tomatoes in oil, drained
- 40 g (about 6 big) black olives
- 20 g (about 2 heaping tsps.) capers
- 2 tsps. thyme, chopped
- 1 tbsp. parsley leaves, chopped
- 1 tbsp. oil, where tomatoes soaked
- 2 tbsps. lemon juice
- salt
- peppers
Directions:
- Chop garlic and fry in a hot oil in a pan, untill garlic will start to brown.
- In a bowl add beans and fried garlic.
- Cut onions in half rings. Add to the beans.
- Slice dried tomatoes and also add to the beans.
- Chop capers and olives. Add to the beans.
- Season salads with lemon juice, greens and seasoning. Mix lightly.
- Cover salads with the plastic film and put in a refrigerator for a half an hour.
- Enjoy!
