Another name of this granola should be “It can’t be more healthy” 🙂 Now almost every sweet is too sweet for me, that’s why I liked this granola – it has only a mild sweetness. But making this granola you should use really overripe banana.
Leftovers of this granola I used in healthy layered dessert. This granola was really good with unsweetened baked apples and natural yoghurt. Me and my hubby enjoyed it a lot. But it didn’t impressed my kids. They said that yoghurt is too sour. So next time I think I’ll add some sugar in there.
Banana granola sugar-free and oil-free
Time needed:
Yields: 4 servings
Calories: 275 kcal / serving
Ingredients:
1 cup = 237 ml
- 1 overripe banana
- 2 tsps. ground cinnamon
- 1 tsp. vanilla extract
- pinch salt
- 2 cups rolled oats
- 1/3 cup coconut flakes
- 1/3 cup walnuts or pecans, chopped
Directions:
- Preheat oven to 165°C. Line baking tray with baking paper.
- In a blender mash banana. Then add cinnamon, vanilla extract and salt.
- Add rolled oats, coconut flakes and nuts. Mix thoroughly.
- Pour mixture on a baking tray and distribute evenly.
- Bake 10 minutes, then mix carefully and bake 7-10 minutes more.
- Let cool granola completely. Then pour in an airtight container.
- Enjoy your breakfast!
