This stew is very simple and cassual. Here pitas are as turbo feature 🙂 But they are not necessary. Just we love them and time after time I bake them. Next time we will make some yoghurt sauce with seasoning. Then the dish would be perfect. And this time we thought about the sauce only in the end.
Minced pork and green beans stew in whole grain pita
Time needed:
Yields: 4 servings
Calories: 640 kcal / 1 serving
Ingredients:
1 cup = 237 ml
- For whole wheat pitas:
- 2 1/2 cups whole wheat flour
- 1 cup warm water
- 10 g fresh or 3 g dry active yeasts
- 1 tsp. salt
- 1 tsp. oil
- For minced pork and green beans strew:
- 1 tbsp. olive oil
- 1 didelis onion, finely diced
- 1 red hot pepper, seeded and chopped
- 500 g lean minced pork
- 3 skiltelės garlic, finely chopped
- 1 tbsp. fresh or 1 tsp. dried thyme leaves
- 200 g green beans, trimmed and cut in 2-3 cm chunks
- 300 ml vegetable stock
- salt
- ground black peppers
Directions:
- Preparing pitas:
- Dissolve yeast in warm water. Gradually add half flour and mix well. Cover sticky dough with food film and put in a warm place for 30 minutes.
- Mix in oil, salt and the rest of flour. Knead dough 8-10 minutes, then roll into a ball and put in a bowl, coated with oil. Put in a warm place to rise for 2-3 hours.
- Preheat oven and baking tray to 225°C. Devide dough in to 10-12 balls. Roll each to 3-4mm thickness.
- Bake one pita at a time – it will be easier to control baking process. Put pita on a hot baking tray and bake 4-5 minutes, while it will bloat.
- Preparing stew:
- Heat the oil in a large frying pan and add the onion. Cook for about 3 minutes until soft, then add hot pepper and cook for 1 minute. Add the pork and cook for 3–5 minutes until no longer pink.
- Stir in the garlic, thyme, and green beans. Cook for 1 minute, then add the stock. Season well with salt and black pepper, bring to a boil, then reduce to a simmer. Cook for about 15–20 minutes, stirring occasionally. Top up with boiling water if it gets too dry.
- Put some stew into pita and serve. Enjoy!
